Charlie's Saucery Buffalo Cauliflower Bites

Who needs buffalo wings when you have cauliflower showing off its spicy side? Toss these veggie bites in Charlie's Saucery glaze, and watch your guests forget they ever knew what a chicken wing was.

Buffalo Cauliflower Bites:

Ingredients:

  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup milk (or plant-based milk for a vegan option)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Charlie's Saucery Hot Sauce
  • 1/4 cup unsalted butter (or vegan butter for a vegan option), melted
  • Green onions, chopped (for garnish)
  • Ranch or blue cheese dressing (for dipping)

Instructions:

  1. Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the Batter: In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until you have a smooth batter.

  3. Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's well-coated. Shake off any excess batter and place the coated florets on the prepared baking sheet, leaving space between each piece.

  4. Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes or until the cauliflower is golden brown and crispy.

  5. Prepare the Buffalo Sauce: While the cauliflower is baking, in a separate bowl, mix Charlie's Saucery Hot Sauce and melted butter. Whisk until well combined.

  6. Toss in Buffalo Sauce: Once the cauliflower is done, transfer the baked florets to a large mixing bowl. Pour the Charlie's Saucery and butter mixture over the cauliflower, tossing gently to coat each piece evenly.

  7. Bake Again: Place the coated cauliflower back on the baking sheet and bake for an additional 10-15 minutes or until the bites are crispy and the sauce has caramelized.
